The person behind the oven

I like making bakes people get excited about.

I’ve always been curious about how things work. That curiosity took me into science: a bachelor’s in forensic science and a master’s in toxicology.

Outside of school, I tend to learn by trying things myself—woodworking, sewing, fixing my PlayStation, and whatever project catches my attention. After moving from Europe to the U.S., I started dealing with food intolerances, which pulled that curiosity toward food. I tried kombucha, yogurt, tempeh, and fermentation, but baking was the thing that stuck.

I still love figuring out a new bake, but the best part is seeing someone get excited about something I made. Bread Actually gives me a reason to keep learning and share the results.

For the curious

The details are here if you want them.

You don’t need to read a flour essay before ordering a cinnamon roll. But ingredients and process matter to me, so I keep the information available for anyone who wants to know more.

01

Fresh-milled wheat

When a recipe uses whole-wheat flour, I mill the wheat shortly before baking. I currently fresh-mill wheat only.

02

Sourdough

Sourdough shows up in several bakes, from loaves to cinnamon rolls. I keep a separate page for the process and fermentation details.
